11/17 What’s Up Japan

Hello people,
It’s already the third week in November. Time flies by so fast. We don’t even have two more months in 2019.
We were talking about Mushrooms today.
Matsutake Mushrooms. Very delicious and the good thing about this one is that you can actually go into the hills and find it. They grow at the base of trees, usually under cover of fallen leaves. It takes a little skill to be able to locate these mushrooms under all the foliage cover on the ground.
But you have competitors from wild animals in the forest, like squirrels, rabbits and deer who consider this a delicacy too.

Here is a mushroom I recently discovered called the Ichibandori Namadonko.
Delicious. The grooved lines on the caps seem to help absorb the flavor of whatever broth you put this into.

Another recent discovery is the Shimofuri Hiratake.
